Daniel, the co-owner of and a chef at Enso was born and raised in Venezuela where he had received his formal training in Japanese cuisine. Danieldecided to blend his passion of Japanese food and travel, by working in Columbia, Chile, Peru, Panama, Mexico and Guatemala before calling Costa Rica home in 2016, when he moved to Manuel Antonio. Shortly after, in 2017, Enso opened its doors.
Utilizing the South and Central American influence Daniel created his own Sushi fusion. One of his specialties that introduces you to sushi is his Omakase ‘I’ll leave it up to you” dish: a multi-course tasting menu that showcases the freshest ingredients including dorado and tuna. His extensive menu includes both raw and cooked dishes, sashimi, sushi, specialty dishes like cooked Angus beef “Quepos rolls” or Chipotle rolls, the catch of the day, and even vegan dishes with eggplant, mushroom, or soba noodles. The dishes can be enjoyed with Japanese, craft or local beer, wine or sake. For the ultimate final touch to a perfect meal, try the decadent Enso Ice cream Tempura!
